- 1 teaspoon olive oil
- ½ pound sweet Italian turkey sausage links
- 16 ounces low-sodium canned white beans, drained and rinsed
- 2 potatoes, diced
- 1 onion, diced
- 1 carrot, diced
- 2 cloves garlic, minced
- 4 cups kale, roughly chopped
- 1 quart water
- 2 Tablespoons reduced-fat parmesan cheese, grated
Heat oil in large pot over medium heat. Add sausage and sauté until browned.
Add beans, potatoes, onion, carrots, and garlic to pot and cook until beginning to soften, about 5 minutes.
Add kale to pot and cook until wilted.
Add bouillon cubes and water to pot. Bring to a boil. Reduce heat, cover with lid and simmer 15-30 minutes or until potatoes are soft and fully cooked.
Top with grated parmesan to serve.
