Tomato Cucumber Salad

Ingredients:

  • 3 medium tomatoes
  • 1 large cucumber
  • 3 green onions
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (from 1 lemon)
  • ¼ tsp kosher salt
  • Black pepper to taste

Directions:

  1. Cut the tomatoes into small pieces. Scoop out the seeds and throw them away.
  2. Cut the cucumber and green onions into small pieces.
  3. Mix the vegetables in a large bowl.
  4. Right before serving, mix in the olive oil, lemon juice, salt, and pepper. Stir well and serve!
