- 2 teaspoons olive oil
- 2 pounds sirloin tip roast, visible fat trimmed and cut into small pieces
- 1 large onion, diced
- ¼ cup cilantro, chopped
- ¼ teaspoon garlic powder
- ⅛ teaspoon ground black pepper
- 15 ounces low-sodium canned diced tomatoes
- 2 ounces tomato paste
- 28 ounces canned hominy, drained and rinsed
Heat oil in a large pot over medium. Add beef and brown on all sides.
Add onion to pot with beef and cook until tender.
Add cilantro, garlic powder, black pepper, and enough water to cover the meat. Cover pot and cook over low heat until meat is tender, about one hour.
Add canned tomatoes and tomato paste. Continue cooking for 20 minutes.
Add hominy to soup and continue cooking another 15 minutes, stirring occasionally, over low heat.
