Mexican Pozole Soup

  • 2 teaspoons olive oil
  • 2 pounds sirloin tip roast, visible fat trimmed and cut into small pieces
  • 1 large onion, diced
  • ¼ cup cilantro, chopped
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon ground black pepper
  • 15 ounces low-sodium canned diced tomatoes
  • 2 ounces tomato paste
  • 28 ounces canned hominy, drained and rinsed

Mexican Pozole Soup


  • Heat oil in a large pot over medium. Add beef and brown on all sides.

  • Add onion to pot with beef and cook until tender.

  • Add cilantro, garlic powder, black pepper, and enough water to cover the meat. Cover pot and cook over low heat until meat is tender, about one hour.

  • Add canned tomatoes and tomato paste. Continue cooking for 20 minutes.

  • Add hominy to soup and continue cooking another 15 minutes, stirring occasionally, over low heat.
