  • 2 apples, cored and sliced
  • ½ cup walnuts, toasted
  • ½ cup part-skim mozzarella cheese, shredded
  • 4 scallions, sliced
  • ¼ cup fresh parsley
  • ¼ cup lime juice
  • 2 tablespoons olive oil
