- 6 cups spinach, torn
- 1 large apple, cored and diced
- ½ cup reduced-fat cheddar cheese, shredded
- ¼ cup red onion, minced
- ¼ cup sunflower seeds
- ¼ cup olive oil
- ¼ cup apple cider vinegar
- 3 tablespoons honey
- 2 teaspoons Dijon mustard
- ¼ teaspoon ground black pepper
Add spinach, apple, cheese, onion, and sunflower seeds to a bowl.
In a small bowl, whisk together oil, vinegar, honey, mustard, and pepper. Pour over the salad mixture and toss together.
