Build Your Own Tex Mex Meal

Do you ever get home from work and not know what to make for dinner? Tex Mex meals such as burrito bowls, nachos, and quesadillas are quick, easy, and can be made with foods from your #BetterPantry. Use these simple steps to Build Your Own Tex Mex meal.

Let’s start with a Grain Base!

If you’re making a burrito bowl brown rice is a good base. One cup of uncooked rice makes about three cups of cooked rice, which is the perfect amount to make a large burrito bowl for a family of four. Whole wheat tortillas are great for making quesadillas. Instead of buying whole grain tortilla chips, use whole wheat tortillas to make your own chips for nachos. Cut the tortillas into triangles, spray with nonstick cooking spray, then crisp them in the oven.

Add a Lean Protein

Beans are a staple food item you can keep in your #BetterPantry because they are a great, low-cost source of protein. Whenever you don’t have leftover chicken or lean ground beef, toss in a can of beans. Rinse and drain the canned beans to remove extra sodium and then quickly warm them up in a pot for a few minutes. If you do have leftover chicken just shred it and use as a great addition to the burrito bowl, quesadilla, or nachos. 

Top with Vegetables 

You can add a variety of vegetables to any Tex Mex dish. Some Tex Mex vegetables your family might enjoy are corn, tomatoes, peppers, and onions. You can keep these vegetables in your #BetterPantry frozen or canned for quick meals so you won’t have to worry about food waste. Grocery stores have a great selection of mixed, frozen vegetables. For the quesadillas and nachos you can use a frozen pepper mix. All of the frozen and canned vegetables can easily be substituted for fresh vegetables. 

Finish off with Toppings and Condiments

To spice up the rice, add onion powder and cayenne pepper. Other great Tex Mex spices include chilli powder, cumin, or garlic powder. A good time to add the spices is when warming up the chicken, rice, or beans. As for condiments, all three dishes can be topped off with salsa, lite sour cream, or guacamole.
