  • net weight ounces canned black-eyed peas, drained and rinsed
  • tomato(es), diced
  • net weight ounces lean cooked ham, chopped
  • green onion(s), sliced
  • fluid ounces red wine vinegar
  • fluid ounces olive oil
  • fluid ounces ground black pepper

Black-Eyed Pea & Ham Salad

Instructions

  • Add black-eyed peas, tomatoes, ham, and green onion to a bowl. Set aside.


  • In a separate bowl, mix red wine vinegar, olive oil, and ground black pepper together to form dressing.


  • Drizzle dressing over black-eyed pea mixture. Toss gently.


  • Serve immediately or cover and chill until ready to serve.
